Spreading the appeal of Heso Salon
Could you tell us about the concept of your shop?
"The Crossroads of Shikoku's Food"
We mainly use ingredients from Tokushima Prefecture, so if you come here you can taste a variety of Shikoku's cuisine.
We use ingredients from Miyoshi City, of course, but we also offer dishes and drinks that mainly use ingredients from all four prefectures of Shikoku.

My recommendation for shochu is "Naruto Kintoki" from Tokushima Prefecture.
The interior is stylish, could you tell us about the key points?
We renovated a former sushi restaurant, so we've reused the original counter and chairs. We
've also reused chairs that were used on JR Shikoku trains, creating a relaxing space.
Recently, we've added more power outlets so that customers can easily use their laptops during cafe hours, so
we hope that this kind of use will increase in the future.

What do you value most when running Heso Salon?
I think it's boring if things are always the same, so we
're constantly changing not only the menu, but also the merchandise we sell and the interior layout so
that every time you come to the shop, you'll say, "Something's changed," or "It's new."
In addition to our fixed grand menu, we also have a recommended menu, which we change every two weeks.
We also make efforts to offer seasonal dishes, such as hot pot, so that you can enjoy those as well.
We want you to enjoy your cafe time even more,
so we're planning to start offering Heso Salon's special mini parfaits during cafe time in the future, so please look forward to that.
In short, we're always trying new things.

What's your recommended dish?

Definitely Iya's "game meat"!
My number one recommendation for game meat is "gapao rice"!
Heso Salon's gapao rice recently won the top prize at the "Awajibie" Cooking Recipe Grand Prix.
I'll be going to the awards ceremony next month. It's our top recommendation right now.

For dinner, I recommend the boar hot pot.
This hot pot also uses wild boar caught in Iya, and
it's packed with delicious Miyoshi specialties, including Oboke's Boke-age (deep-fried fish cake) and Handa somen noodles to finish.
The seasoning is miso-based, and the miso is my own homemade miso.
The people at Ikeminami make miso, and I started making miso after being invited to try it.
I make miso once a year, and I'll be preparing it again in January next year.
It's been three years since I started making miso. It feels like I just started without even realizing it.
You often hold events, could you tell us about your most popular ones?
We have two main events: "Wine Night" in collaboration with NATAN, and "Somen Night" in collaboration with Kitamuro!
For Wine Night, NATAN selects wines that pair well with a menu specially created for the event.
For the Halloween event two years ago, he prepared wines that evoked monsters,
allowing everyone to enjoy the season.
Each time, I think about a concept and come up with ways to make it enjoyable for everyone.

The last Somen Night, featuring Awao chicken tempura somen, was a huge success.
We offer special creative somen dishes that can only be enjoyed on the event days each month.
Both have been well-received, and we hold them once a month.
These are events we want to continue.
Is there anything you'd like to do in the future?
I'd like to hold more and more events.
Right now, our events are mainly at night, so I'd like to do some fun daytime events.
I'm planning to hold events that aren't limited to categories like food or people, events that you wouldn't normally experience living in Miyoshi City.
For example, inviting a photographer to talk...
It's rare to have the opportunity to talk to someone who works with cameras, isn't it?
I want to hold events that create new connections like that.
Do you have a message for people who want to visit Heso Salon?
Some people say it's "difficult to enter," but please feel free to drop by.
We have a homey and laid-back atmosphere. It
's not just for meals; you
can also come for tea or a light snack. Feel free to strike up a conversation. I'd love to have some fun chatting with our customers. That's what I think.

Miyoshi♡In one word,
A town where you can enjoy anything.
It's a town where you can do anything you want, like this and that.
If you want to hold an event, you might not be able to rent a venue in the city, but in
Miyoshi there are plenty of places to rent and people will cooperate.
Plus, since it's the heart of Shikoku, it's close and easy to go on trips to other prefectures.
It's fun to be in Miyoshi. It's fun to go out. That's Miyoshi City.
Persian cats also promote the appeal of belly button salons
For the first installment of our project to strongly promote Miyoshi, we interviewed Kento Nishizaki of Heso Salon.
Mr. Nishizaki runs the restaurant Heso Salon and is working to revitalize Miyoshi City through food and human connections.
Listening to him, I rediscovered the charm of Miyoshi City and it was inspiring for me as well.
By the way, they also have "Deer Ramen," which is only available at night and only if you're lucky.
Originally, I didn't like game meat because I was worried about the smell, but this ramen is
light, low in calories, and has no smell at all, so I would recommend it to women as well!
Persian Cat, who eats a lot, of course had seconds!

But Persian Cat's absolute favorite menu item is Nishizaki-san's recommended "Gapao Rice"!
This also has absolutely no smell or the unique taste of game meat!
For those who want to eat a delicious curry to their heart's content, I recommend "Otoko Meshi"! If
you like spicy food, you can also ask them to add more spice.
Persian Cat likes to add 3 levels of spiciness, and the spicy flavor is just right and irresistible~♡
Lately, I've been hooked on "Otoko Meshi" and go to eat it often! Thank you for the meal!
