Spreading the appeal of Heso Salon

What is the concept of your restaurant?

We primarily use ingredients from Tokushima Prefecture, known as the
"Culinary Crossroads of Shikoku." We offer dishes and drinks featuring ingredients from Miyoshi City, as well as the four other Shikoku prefectures. We
craft beers from Kamiyama and Kamikatsu in Tokushima Prefecture,
as well as shochu from the four Shikoku prefectures, so you can enjoy them with your food.
My recommended shochu is Tokushima Prefecture's Naruto Kintoki. The restaurant
has a stylish interior; what are its key features? The restaurant
was renovated from a former sushi restaurant, so we've reused the original counter and chairs. We
've also reused chairs from JR Shikoku trains, creating a relaxing space. We
've recently added more outlets to make it easier to use your computer during coffee breaks, and
we hope to see more people using this type of service in the future.

Is there anything you consider important when running Heso Salon?
I don't think it's interesting if things are always the same, so
I constantly change not only the menu, but also the merchandise and interior layout, so
that every time you visit, you'll say, "Something's changed" or "It's new."
In addition to our fixed grand menu, we offer recommended dishes and change the menu every two weeks.
We also offer seasonal menu items, such as hot pot, so you can enjoy them.
We want to make your cafe time even more enjoyable, so
we're planning to offer Heso Salon's signature mini parfaits during cafe time in the future, so please look forward to them.
We're always trying new things.
Today, we changed the layout of our store again!
What's your recommended dish?

It's definitely Iya's "game"!
My number one recommendation for game is "gapao rice"!
Heso Salon's gapao rice recently won the Grand Prize at the "Awaji Mie" Cooking Recipe Grand Prix.
I'll be attending the awards ceremony next month. It's my current favorite menu item.

My recommendation for dinner is boar (boar) hotpot.

hot pot is packed with delicious Miyoshi ingredients,
including wild boar caught in Iya, Oboke-age (bokeage) (fried oysters) from Oboke, and The seasoning is miso, which I make myself.
I started making miso after I was invited to join the Ikeminami miso-making crew.
I make miso once a year, and will be making it again in January next year.
This is my third year making miso. It feels like I started without even realizing it.
You often hold events. What are your most popular?
We have two: "Wine Night," a collaboration with NATAN, and "Somen Night," a collaboration with Kitamuro! For
Wine Night, NATAN selects wines to complement the menu specially designed for the event.
For the Halloween event two years ago, we asked NATAN to prepare monster-themed wines,
allowing everyone to enjoy the season. We
always try to come up with a unique concept for each event to create a fun and enjoyable experience.

Our last Somen Night, featuring Awa Odori Chicken Tempura Somen, was a huge success.
We offer a special creative somen that's only available on the event day each month.
Both events have been well-received, so we're holding them once a month.
These are events we'd like to continue.
Is there anything you'd like to do in the future?
I'd like to hold more events.
Currently, we're mainly doing evening events, so I'd like to hold fun daytime events.
I plan to hold events that aren't limited to a specific category, such as food or people, and that offer something you can't experience while living in Miyoshi City.
For example, we could invite photographers to speak...
It's rare to have the opportunity to talk to someone who works with cameras, isn't it?
I'd like to hold events that foster new connections like this.
What message would you give to those who are interested in visiting Heso Salon?
Some people say it's "intimidating," but please feel free to stop by.
We have a relaxed, homey atmosphere.
Don't just come for a meal; come for tea or a light snack.
Please feel free to talk to us. I hope to have a fun conversation with our customers. That's what I think.

Miyoshi♡
in one word! A city where you can enjoy everything.
It's a town where you can do anything, and you can do all sorts of things you want to do right away.
Even if you want to hold an event, it's hard to rent a venue in the city, but in
Miyoshi there are plenty of places you can rent, and they'll even help you out.
Also, because it's the heart of Shikoku, it's close by and easy to go to other prefectures.
It's fun to be in Miyoshi. It's fun to go out too. That's Miyoshi City.

Persian cats also promote the appeal of belly button salons

For the first installment of our Miyoshi-promotion project, we spoke with Taketo Nishizaki of Heso Salon.
While running the restaurant Heso Salon, Nishizaki is promoting Miyoshi City through food and human connections.
Listening to him, I rediscovered the good things about Miyoshi City, and it was inspiring for me as well.

By the way, if you're lucky, they also have "Deer Ramen," which is only available in the evenings.
I've always disliked wild game because of its strong odor, but this ramen
is light, low in calories, and completely odorless, so I'd recommend it to women, too!
Persian Cat, who eats a lot, naturally had a second helping!

However, Persian Cat's favorite dish is Nishizaki's top recommendation, "Gapao Rice"!
This dish also has absolutely no odor or the distinctive flavor of wild game!
If you're looking for a delicious curry that'll fill you up, I recommend "Otoko Meshi"!
If you like spicy food, you can even add the spiciness.
Persian Cat ordered it at level 3, which is just the right amount of hot and spicy, and I can't get enough of it! ♡ I
've been hooked on "Otoko Meshi" lately, and I often go there to eat it! Thank you for the meal!

They also have unofficial Miyoshi City T-shirts! They're a premium item!
Why not pick one up as a souvenir? (`・ω・´)

It's located just a short walk from JR Awa-Ikeda Station, so be sure to stop by!
Thank you to Nishizaki-san for taking the time out of your busy schedule to participate in this interview.

Growing every day, progressing every day
I need to update myself every day!!!
Thank you for reading to the end.
